The nose is complex and evolves significantly with each glass, revealing notes of pear, candied lemon, citrus zest, elderflower, jasmine, and honeysuckle... The palate is creamy with a lovely length and plenty of body, leading to a grand finish that is both fresh and lingering.

A Grand Cru Champagne made from the 2021 vintage, complemented by a few reserve wines. A Blanc de Blancs—100% Chardonnay—from vines planted in Chouilly, in the northwest and southeast of the village, at the foot of the hillsides, on soils with exposed chalk. The grapes were harvested by hand. Direct pressing, vinification, and 8 months of aging—98% in stainless steel tanks and 2% in oak barrels. Bottling, aging on racks, and disgorgement in October 2024. A brut Champagne, with 6 grams of dosage per liter.
Rémi, Olivier et Jérôme Legras
Rémi, Olivier and Jérôme Legras run the Legras & Haas house, in Chouilly, Grand Cru of the Côte des Blancs. Their father François, learning the vine from his own father from the age of 16, carries four centuries of the village's winegrowing tradition.
