100% Chardonnay from vineyards cultivated biodynamically (the whole estate is certified by Biodyvin) planted on a .95-hectare plot of Triassic-period clay over a bedrock of blue marl, facing south. Stéphane produces no less than eight different Chardonnays, of which Les Bruyères is itself a very fine example. Made from grapes harvested by hand, followed by direct pressing, and two years of maturation in Burgundy oak barrels. Bottled without fining or filtration, just a micro-dose of sulphur.
