A 100% Pinot Noir wine certified organic and biodynamic, made of a selection of terroirs composed of limestone scree from the Bajocien period. Grapes are harvested by hand, vinification and maturation in Burgundy barrels for 14 months. Finally, the bottles spend minimum of 48 months in stacks. Disgorged in July 2023, it receives zero dosage, making it an extra-brut. Without added sulphur.
Stéphane Tissot took over the beautiful family estate from André and Mireille Tissot in 1990, and in over thirty years has accomplished a colossal task to reach the summit of the Jura and become a model far beyond the borders of France.
