A taut, pure Chardonnay with beautiful acidity. The nose is redolent of fruit with notes of spice. The palate is mineralesque and rich, boasting lovely concentration.
100% Chardonnay from vines farmed biodynamically and planted on Bajocian Age limestone scree over Lias clay, facing south and west. The vineyard is ploughed, and the grapes handpicked with small crates. Vinification: direct pressing, followed by transfer into 228-litre barrels for fermentation and maturation for 18 months. Bottled without fining or filtration, with just a microdose of sulphur.
Stéphane Tissot took over the beautiful family estate from André and Mireille Tissot in 1990, and in over thirty years has accomplished a colossal task to reach the summit of the Jura and become a model far beyond the borders of France.
