100% Chardonnay from vines farmed biodynamically and planted on Bajocian Age limestone scree over Lias clay, facing south and west. The vineyard is ploughed, and the grapes handpicked with small crates. Vinification: direct pressing, followed by transfer into 228-litre barrels for fermentation and maturation for 18 months. Bottled without fining or filtration, with just a microdose of sulphur.
