A Côtes-du-Jura-labelled wine, certified biodynamic by DEMETER, from a vineyard of Chardonnay within the Château Chalon appellation, planted on a clay-limestone slope. Vineyards here are supposed to be planted with Savagnin, and these remain only “en sursis”– French for ‘on borrowed time’! Grapes are harvested by hand, vinification and maturation in Burgundy barrels for 12 months. Only a light dose of sulphites at bottling, unfined and unfiltered.
