100% Savagnin, including one-third Savagnin Rose, from organically farmed vines planted in 2015 on clay-limestone soils. Hand-harvested. Natural winemaking: direct pressing of whole clusters, fermentation in demi-muids and stainless steel tanks. This wine struggled to complete fermentation; the 2020 vintage was very hot and dry, resulting in high sugar levels... Fermentation was completed by adding a small amount of Savagnin from the 2022 and 2023 vintages. Aged for four and a half years, bottled in December 2025, without fining or filtration, and with no added sulfur.
