Chenin from vines aged from 10 to 50 years, farmed biodynamically and planted on a selection of parcels with clay soils rich in coarse flint particles and a Tuffeau subsoil. The grapes were harvested by hand with successive sorting. Direct pressing of the whole clusters in a pneumatic press, fermentation in 620-litre demi-muids barrels, then bottled in May 2023. Aged in bottles, on laths, in the domaine’s cellars for 23 months. Disgorged in February 2025, without any dosage. A brut nature sparkling wine with less than 2 g/L residual sugar.
François Chidaine
François Chidaine is one of the most talented winemakers of his generation, a true Chenin master to whom the Montlouis-sur-Loire appellation owes a great deal. Son of winemakers, he founded his domaine in 1989, bringing together scattered parcels over 4 hectares. Early on, Didier Dagueneau convinced him to work organically, then biodynamically: the vineyard became Demeter certified in 1999...
