100% Chenin from vines aged from 10 to 24 years, farmed biodynamically and planted on a north-west facing parcel with clay-limestone soils (no flint here) over a tuffeau subsoil. “Bournais” refers to a clay soil type rich in silts in Touraine. The grapes were harvested by hand with successive sorting. Slow pressing in a pneumatic press, fermentation in demi-muids barrels with indigenous yeasts, then ageing on total lees in these same 620-litre barrels for 11 months. Bottled unfined and unfiltered, with little sulphur.
François Chidaine
François Chidaine is one of the most talented winemakers of his generation, a true Chenin master to whom the Montlouis-sur-Loire appellation owes a great deal. Son of winemakers, he founded his domaine in 1989, bringing together scattered parcels over 4 hectares. Early on, Didier Dagueneau convinced him to work organically, then biodynamically: the vineyard became Demeter certified in 1999...
