100% Chenin from 40-year-old vines farmed biodynamically, planted across a selection of parcels in V… (we're not allow to say — it’s a Vin de France!) with deep clay soils and white chalk over a tuffeau subsoil. The grapes were harvested by hand with successive sorting. Vinification: slow pressing in a pneumatic press, fermentation in demi-muids with indigenous yeasts, then ageing on total lees in these same demi-muids (620-litre barrels) for nearly a year. Bottled in August 2024, unfined, unfiltered, with little sulphur.
François Chidaine
François Chidaine is one of the most talented winemakers of his generation, a true Chenin master to whom the Montlouis-sur-Loire appellation owes a great deal. Son of winemakers, he founded his domaine in 1989, bringing together scattered parcels over 4 hectares. Early on, Didier Dagueneau convinced him to work organically, then biodynamically: the vineyard became Demeter certified in 1999...
