A captivating nose with notes of Williams pear, almond, and sugarcane... A soft Chenin with 13 grams of residual sugar per liter, but given the complexity and depth of the nose, you’d almost expect more. Fleshy on the palate, with thin and elegant bitters on the finish. What else??!

100% Chenin, farmed biodynamically, from both young and very old vines aged 5 to 100 years. A single-parcel cuvée located in Montlouis-sur-Loire, on clay soils with flinty elements over a tuffeau subsoil. The grapes were harvested by hand in small crates with successive sorting. Vinification: slow pressing in a pneumatic press, fermentation and ageing in 620-litre demi-muids barrels, on total lees, for 11 months. Bottled at the estate, unfined, unfiltered, with little sulphites.
François Chidaine
François Chidaine is one of the most talented winemakers of his generation, a true Chenin master to whom the Montlouis-sur-Loire appellation owes a great deal. Son of winemakers, he founded his domaine in 1989, bringing together scattered parcels over 4 hectares. Early on, Didier Dagueneau convinced him to work organically, then biodynamically: the vineyard became Demeter certified in 1999...
