100% Chenin from old vines aged 30 to 90 years, farmed biodynamically and planted across a selection of parcels that all have clay soils rich in flinty elements and tuffeau subsoils. The grapes were harvested by hand with successive sorting. Vinification: slow pressing in a pneumatic press, fermentation in demi-muids with indigenous yeasts, followed by ageing on total lees in these same demi-muids (620-litre barrels) for 11 months. Bottled at the domaine, unfined, unfiltered, with little sulphur.
François Chidaine
François Chidaine is one of the most talented winemakers of his generation, a true Chenin master to whom the Montlouis-sur-Loire appellation owes a great deal. Son of winemakers, he founded his domaine in 1989, bringing together scattered parcels over 4 hectares. Early on, Didier Dagueneau convinced him to work organically, then biodynamically: the vineyard became Demeter certified in 1999...
