100% Chenin from 10- to 40-year-old vines farmed biodynamically on flinty clay soils over tufa stone. The wine is a blend of selected barrels from 24 parcels spread over 5 hectares in the communes of Lhomme and Ruillé-sur-Loir. Harvesting is done by hand with crates. Vinification: after pneumatic pressing and natural cold settling, the wine ferments with indigenous yeasts, then matures on its fine lees for 12 months in barrels that have seen several wines. Bottled in November 2022 with 21 grams of residual sugar/litre, and a light dose of sulphites.
