100% Jaen (also known as Mencia in Spain), single plot selection, from old vines up to 40 years old, farmed organically and planted at an altitude of around 500 meters on granite soils in the village of Pinhanços, with a Southeastern exposure. The grapes were harvested by hand. Vinification: full destemming, crushing, 6 days of maceration, pressing, fermentation in large open top stainless steel vats, 18 months of aging in French barrels, without new oak. Bottled at the estate. Aged for more than 7 years in bottles in the estate’s cellars.
