A blend of Grenache Blanc, Bourboulenc and Vermentino, from vines around 7 years old, farmed organically and planted at Les Carrés vineyard site in Cairanne. The fruit of a viticultural experiment, Marcel is planting Mediterranean varieties that are better adapted to today's hotter climatic conditions. Harvested by hand, with yields 40 hl/ha. Vinification: cold pre-fermentation maceration for 12 hours, followed by 5-7 hours of pressing, and 15 months of maturation in concrete vats. Neither fined nor filtered, and just 2 grams of sulphur at bottling.

The vast estate is composed of 60 hectares and yet, in the vineyard like in the cellar, the work is very, very rigorous.
