Blend of young vines: 40% Roussanne, 40% Clairette, 10% Grenache Blanc and 10% other white grape varieties, from organically grown vines planted on clay-limestone and grey marl soils at an altitude of 600 to 650 meters. Manual harvest for yields of about 25 hl/ha. Careful sorting of the grapes with direct pressing, separate vinification of the grape varieties for 9 months of maturation in casks and vats. Soft plate filtration, micro-dose of sulfur before bottling, for less than 25 mg/l of total SO2.
