100% Syrah. Selected from the heart of the Bâties parcel, made up of old vines grown organically and planted on clay soils, facing southwest on a gentle slope. Vinification is natural and without additives: with whole cluster grapes, with a small portion crushed to help start the fermentations. Maceration for about 15 days, with just a little punching down of the cap, maturation in demi-muids barrels that have seen several wines (so without new oak). Bottled without any added sulphur between August and October. No fining nor filtration.
