100% Syrah. A blend of 3 plots: “Papi Fourmille”, a flat parcel with 80-year-old vines; “Varogne”, both flat and terraced in parts with vines between 25 and 70 years old; and “Thouet”, from a flatter area with clay soils. Natural vinification of whole bunches, with a small portion crushed to start the fermentation. Maceration for about 20 days, some punching off the cap, maturation in demi-muids and barrels, without new oak. Bottled without filtration, fining nor added sulphur between August and October, depending on the vintage.
