100% Roussanne from about 30-year-old vines, grown organically, planted on loamy and clay soils, and harvested by hand. Vinification: direct pressing, fermentation and aging in 500-liter casks and in barrels that have seen several wines, on the lees, for 8 months. Bottled at the beginning of May 2023, micro-dose (truly a microscopic one) of sulfur (0.3 gr/hl) added before bottling.
