A blended cuvée of 50% Cinsault from 20-year-old vines and 50% Syrah from vines planted on sandy soils. The vines are farmed organically and harvested by hand, with controlled yields. The two grape varieties are vinified separately, with whole bunches, 8-days of carbonic maceration, gentle pressing, two months of maturation in vats, and blending ten days before bottling. Neither fined nor filtered, with just a microdose of sulphur (0.5 grams/hectolitre).
