100% Carignan from vines grown organically and harvested by hand, with low yields. Vinification: direct pressing of the whole bunches, bottled at the end of September 2021 with residual sugars to create effervescence in the bottle, prolonged aging for this grape variety, a bit more than one year on laths. Disgorged, not fined, not filtered, just a micro-dose of sulphur.
