100% Macabeu from vines grown organically and planted in Latour-de-France on shales and marls, quite a fresh terroir. The vines are worked with a horse, light plowing between the rows. Manual harvest during one week, Patrice alternates one day of "picking" of the perfectly ripe bunches, with one day of pressing. Natural vinification, 10 months of aging for 80% in 500-liter stoneware jars, and for 20% in casks that have seen several wines. Unfined, unfiltered, bottled at the Estate without any added sulfur.

Patrice Delthil, originally from the Tarn region in France, fell into the magic of natural wine as a grown up man! After training as an accountant, which he was hardly passionate about, he worked for surfing and skiing jobs, and then one day... he had a revelation!
