Roussillon
Nose carried by notes of white peach, candied pear, Muscat grapes, bergamot... Palate: a light and taut wine, perfectly balanced mineral backbone, beautiful acidity, and a long and salivating finish.
100% Macabeu from vines grown organically and planted in Latour-de-France on shales and marls, quite a fresh terroir. The vines are worked with a horse, light plowing between the rows. Manual harvest during one week, Patrice alternates one day of "picking" of the perfectly ripe bunches, with one day of pressing. Natural vinification, 10 months of aging for 80% in 500-liter stoneware jars, and for 20% in casks that have seen several wines. Unfined, unfiltered, bottled at the Estate without any added sulfur.
