L'Ubac - 2020 - Cyril Fhal
Clos du Rouge Gorge
A wine of great depth and delicacy, with a complex nose and notes of black fruit... A palate that’s rich, yet not overly effusive, and marked by its finesse. A wine in perfect balance, with lots of freshness, almost Burgundian in style. Cellar it and forget about it for a few years.

A blended cuvée of Carignan, very old vines planted in 1905, and of Carignan and Grenache Noir, planted in 1960 on a superb terroir of gneiss and black mica, facing North. Viticulture and vinification are straightforward and natural; infusion is practiced during vinification for greater delicacy. Vinification: fermentation and infusion in barrels, soft pressing, 20 months of aging in a 10-hl wooden vat. An unfiltered wine, with 1 g/hl of sulphur at bottling. One hectare in production, so only 1320 bottles!

Cyril Fhal launched his 5-hectare estate in 2002 in Latour-de-France, just 5 km from Calce, home to numerous renowned winemakers. The young Parisian, his viticulture/oenology diploma in hand, had been on the look out for parcels in the region when he stumbled upon these old vines – between 50 and 100 years old – which no one wanted to work, because they were planted on steep slopes unsuitable...
