100% Mondeuse Blanche (a rare grape variety!) from biodynamically farmed vines planted on gray marl soils at the foot of a hillside beneath the Massif des Bauges. Permanent cover cropping, the grapes were harvested by hand. Vinification: direct pressing, settling by gravity for 24 hours, indigenous yeasts, fermentation and aging in barrels that have held 4 to 6 previous vintages (i.e., no new oak), aging on fine lees for 18 months. Unfined and unfiltered, 2 g/hl of sulfur added during racking two months before bottling. 18 months of bottle aging.
