Jacquère from century-old vines, biodynamically farmed and planted on white limestone scree from Mont Granier. The parcel faces northeast, keeping it cool and well-ventilated. The soils are worked with horse plowing, and harvesting is done by hand. Direct pressing of whole clusters, natural settling by gravity over 24 hours, indigenous yeasts, fermentation and aging in barrels that have seen 4 to 6 wines (so no new oak). Aged on fine lees for two years. Unfined and unfiltered, just 2gr/hl of added SO2 during racking, two months before bottling.
