A renowned terroir in Savoie, the Coteau de la Mort, with its extreme slope, produces a complete and complex wine that is very expressive, with notes of black fruits, prune, and pepper. On the palate: bold, with excellent chewiness and aromas of leather and truffle. Great aging potential.
100% Mondeuse from vines in their second year of conversion to organic farming (it's the estate's second vintage), planted on the Cru de Sain-Jean-de-la-Porte, below the Massif des Bauges. 85% of Chevillard's vines froze, only the Mondeuses survived. Harvested by hand, totally destemmed, gentle maceration. Pressing, 12 months of aging in oak caks that have seen several wines. Just a micro-dose of sulfur during racking, two months before bottling. Seven years of bottle aging in the estate's cellars to allow the tannins to refine.
