100% Mondeuse from vines in their second year of conversion to organic farming (it's the estate's second vintage), planted on the Cru de Sain-Jean-de-la-Porte, below the Massif des Bauges. 85% of Chevillard's vines froze, only the Mondeuses survived. Harvested by hand, totally destemmed, gentle maceration. Pressing, 12 months of aging in oak caks that have seen several wines. Just a micro-dose of sulfur during racking, two months before bottling. Seven years of bottle aging in the estate's cellars to allow the tannins to refine.

Matthieu Goury and Guillemette Renard are the couple behind Domaine de Chevillard, rooted in Saint-Pierre-d’Albigny, Savoie, since 2016.
