100% Gamay, a cuvée produced using purchased grapes from vines in conversion to organic farming, that were harvested manually by Hervé and his team. Vinification: maceration of the whole bunches without forcing the extraction, pressing, aged in vats for 7 months. Bottled at Villemade's in April 2025 without fining nor filtration, with just a micro-dose of sulfur.
