A blend of 80% Sauvignon, 15% Chardonnay, and 5% Menu Pineau, from 43-year-old vines grown organically and planted on flinty sandy soils over Sologne clay. The grapes were harvested by hand, sorted in the vineyard, with low yields. Natural vinification: direct pressing, fermentation and aging in oak casks (55%) and amphorae (45%), on fine lees, for 15 months. Bottled at the estate in November 2024 without fining or filtration, just a micro-dose of sulfur. A wine that is only produced in the best vintages.
