Blend: 85% Pinot Noir and 15% Gamay, from 25-43 years old vines, grown organically and planted on a soil of sandy clay and flint. Harvesting by hand, careful grape sorting in the vines. Vinification: harvesting of whole bunches, 20-day maceration, punching down of the cap, low temperature fermentation, indigenous yeasts. Matured for 11 months, 55% in traditional and demi-muid barrels, and 45% in amphorae. Bottled in August 2022 without fining or filtration, just a micro dose of sulfur.
