Les Ardilles - 2021 - Hervé Villemade
A nose with notes of black fruits, oranges, flowers and spices... On the palate: dense, elegant and well matured. A fruity, mineral wine, with an almost saline finish.

Blend: 85% Pinot Noir and 15% Gamay, from 25-43 years old vines, grown organically and planted on a soil of sandy clay and flint. Harvesting by hand, careful grape sorting in the vines. Vinification: harvesting of whole bunches, 20-day maceration, punching down of the cap, low temperature fermentation, indigenous yeasts. Matured for 11 months, 55% in traditional and demi-muid barrels, and 45% in amphorae. Bottled in August 2022 without fining or filtration, just a micro dose of sulfur.
Hervé Villemade is a natural winemaker situated within the Cheverny appellation. Less of a media darling than his famous neighbour Thierry Puzelat , Hervé and his 25-hectare estate nonetheless have nothing to be shy about. You might say there’s a gentle and productive form of competition between them, a source of motivation perhaps... When the family estate was handed over to him in 1995,...All wines
