Les Ardilles - 2022 - Hervé Villemade
Hervé Villemade
A nose with notes of black fruits, oranges, flowers and spices... On the palate: dense, elegant and well matured. A fruity, mineral wine, with an almost saline finish. "The marriage of indulgence and complexity showcases the Cheverny terroir at its very best." as Hervé puts it!

Blend: 85% Pinot Noir and 15% Gamay, from 25-44 years old vines, grown organically and planted on a soil of sandy clay and flint. Harvesting by hand, in small crates. Vinification: maceration of the whole bunches, with punching down of the cap, low temperature fermentation, indigenous yeasts. Aged in oak casks (80%) and in amphorae (20%). Bottled in July 2023 without fining or filtration, just a micro dose of sulfur. Maturation in bottles in the Villemade's cellars.
