100% Sauvignon Blanc from 60-year-old vines grown biodynamically — a parcel selection on limestone soils. Manual harvest with yields around 40 hl/ha. Natural vinification: total destemming, gentle crushing of the berries, and 6 days of maceration with temperature control. Only the free-run juice is used for this cuvée. Fermentation and 10 months of aging in a mix of terracotta amphorae, stoneware, and large oak vats. Unfined, unfiltered, with just a micro-dose of sulfur.
