A blend of 80% Pinot Meunier and 20% Pinot Noir, sourced from organically farmed vineyards planted in shallow soils with highly draining calcareous marl and, without exception, a thick layer of green clay known as “illite.” Hand-harvested into market garden crates, pressed, aged on lees, bottled, and aged on laths. Disgorged in January 2026 after a total of 40 months of aging. A lightly dosed extra-brut (0.5 g/L), with just a small amount of sulfur (using mine sulfur produced in-house by Cédric).
