100% Savagnin from 25-year-old vines, grown biodynamically and planted on an area of around 40 acres, the plot faces east and shows Triassic clay soils. Harvested by hand, direct pressing in a pneumatic press, fermentation in vats then transferred to large barrels in January 2019. Aged in barrels for 6 years without topping up, like a vin jaune, but some barrels did not develop the veil of yeasts, so the wine remained in contact with the air, without topping up and without alteration! Total SO2 < 20 mg/liter.
