100% Savagnin from vines grown biodynamically and harvested by hand, very ripe. Naturally vinified, this is an orange wine: 4 months of maceration in 420-liter amphorae, then gentle pressing and aging with regular ouillages (=topping-up). Bottled on the estate without fining or filtration and without any addition of sulfites.
Stéphane Tissot took over the beautiful family estate from André and Mireille Tissot in 1990, and in over thirty years has accomplished a colossal task to reach the summit of the Jura and become a model far beyond the borders of France.
