A very pure nose carried by notes of citrus fruits, hazelnut, toast, mineral touch... Equally well-balanced palate, lively bubble and a nice acidity. Finish with a touch of white pepper.

100% Macabeu from organically grown vines planted in La Made lieu-dit. Manual harvest in small crates, controlled yields. Natural vinification: whole bunches, carbonic maceration for 8 days, soft pressing. Only the free-run juice is used in the making of this cuvée, short passage in stainless steel vats. Bottled before the end of fermentation to create the effervescence in the bottle. 8 to 16 months of maturation in stacks. Not fined nor filtered, just a micro-dose of sulphur before bottling.

Marc Castan lives in Leucate in France’s Aude department. This future enfant terrible was born in Narbonne, where he grew up impassioned by both land and sea.
