A Sauvignon cuvée from a 3-ha parcel planted on a clay-limestone soil, located in the commune of Verdigny. The vines are 30 years old, grown biodynamically (the estate is certified organic and biodynamic by DEMETER), and the yields are around 35 hl/ha. As for the vinification: 3 months of maceration in old barrels, with malolactic fermentation included, and natural yeasts. Matured 36 months in old barrels on its fine lees, and bottled without filtration.  No sulphur is added – during vinification, maturation, or at bottling.
