Chenin from 30-year-old vines, cultivated using organic and biodynamic methods, planted on a 0.5-hectare plot in the town of Chahaignes, on soils of clay and flint over tuffeau limestone. The grapes were selectively sorted on the plot and harvested by hand in October 2023. Winemaking: direct pressing in a pneumatic press, natural cold settling, indigenous yeasts, fermentation and aging in 500-liter barrels previously used for various wines, on fine lees, for 9 months. Bottled at the estate in April 2024, then aged in bottle in the estate’s cellars.
