Chenin from organically grown vines, planted on different terroirs in Faye-d'Anjou, Saint-Lambert-du-Lattay, Bonnezeaux, and a few parcels in Savennières. This cuvée is composed of grapes from the Estate and grapes bought on parcels that Thibaud pampers all year long. Manual harvest in small crates. Natural vinification, indigenous yeasts, aging in 45-hectoliter casks and in Burgundy barrels, with 20% of new oak. Bottled in July 2021.
