Ça Enjoue - 2021 - Olivier Le Beau

100% Cabernet Franc from old vines planted in 1984 on a micro-parcel featuring schist soils at the entrance to the plot, and sandstone soils at the end. Organic viticulture and manual harvest, with a superb quality of the harvest in 2021. Vinification: 50% destemmed, 50% whole bunches, 10 days of maceration in vats, gentle pressing, 10 months of aging in vats. Bottled in July 2022, without fining or filtration, just a micro-dose of sulphur at bottling (1gr/hl).
