70% Pinot Noir and 30% Gamay for this vintage, from several parcels between 17 and 47 years old, grown organically and planted on soils of sand with flint and Sologne clay. Harvesting by hand in small crates. Vinification: 15 days of maceration of the whole bunches, low temperature fermentation, indigenous yeasts of course. Pressing, aging for seven months in oak vats. Without fining nor filtration, bottled at the Estate in April 2025 with just a micro-dose of sulphur.
