90% Cabernet Franc from 92-year-old vines, co-planted with 10% Grolleau, Baco, Chardonnay, Chenin, Côt etc. on a 25-acre plot in Saint-Saturnin-sur-Loire. Natural vinification: direct pressing of all grape varieties, starting of fermentation in vats. Bottled with residual sugars to create the effervescence in bottle, aged on laths, disgorged in July 2023. Unfined, unfiltered, zero added sulphur. 700 bottles produced "but I hardly sold any, we drank it at home" says Olivier!
