100% Côt (the name for Malbec in Loire) from 30-year-old vines, grown organically and planted on a 0.5 hectare plot on sandy clay loam, north-south exposure. The grapes were bought to Julien Moreau, at Domaine de Cambalu. Manual harvest, yields of 40 hl/ha. Natural vinification: total de-stemming, 10 days of maceration in vats, indigenous yeasts, gentle pressing, 18 months of aging in 225-liter barrels that have seen several wines. Bottled without filtration, just a micro-dose of sulfur, total SO2 <30 mg / liter.
