A cuvée in reference to a sublime poem by Brassens that we invite you to (re)discover by tasting this bottle with its floral notes of acacia and honeysuckle, honey and quince. Concentrated and voluminous on the palate, a structured wine crafted for gastronomy.
100% Chenin from four-year-old vines grown organically, planted on schist soils. The parcel is classified in the Coteaux-de-l'Aubance appellation, but Olivier has not submitted his wines to the appellation committees, so they are automatically classified as Vin de France. Manual harvest and natural vinification: direct pressing, aging in fiberglass vats for almost 10 months. Bottled in August 2023 without fining or filtration, just a micro-dose of sulfur (1 gr/hl) at bottling.

Olivier Le Beau, a child from the 1977 vintage, founded Le Beau Domaine (i.e. The Beautiful Estate) in 2017 in Saint-Jean-des-Mauvrets, south of Angers. Having grown up in the region, he worked for the Mosse family for a season in 2000, when they started making wine. It was then at Domaine de Rochambeau that he discovered a real interest in the vine and its natural cycle, a major revelation...
