100% Gamay from 30-year-old vines, grown organically and planted on two plots facing North-South, for a total of 0.71 hectare on sandy loam soils. The grapes were bought from Julien Moreau, at Domaine de Cambalu. Manual harvest. Natural vinification: in whole bunches, 14 days of maceration, indigenous yeasts, 6 months of aging in 400-liter oak barrels of three wines. Bottled without filtration, just a micro-dose of sulfur.
