Blend: 50% Chenin, purchased from a friend in Vouvray, and 50% Sauvignon, Menu Pineau and Chardonnay from the estate's own organic vineyards. Harvesting was done by hand, pressing was done directly following the harvest, a very short time in vats, bottled early during alcoholic fermentation, so with residual sugars to create effervescence in bottle. Not fined or filtered, sulfites are carefully controlled.
