Frantz’s friends once wanted to name their bar La Petite Gaule du matin (which translates as “morning wood”); the town hall refused. It became a superb sparkling cuvée! With notes of yellow apple, lemon... The delicate Chenin palate is boosted by a beautiful profusion of bubbles.

A blended cuvée of Chenin from Thouarcé and Sauvignon and Chardonnay from St-Aignan-sur-Cher. The grapes are certified organic, acquired though the estate’s négociant business. In the winery: direct pressing, and separate fermentations for each grape variety, in vats made of resin and enamel-coated steel. The wines were blended around three weeks before bottling at the end of 2022. Disgorged in spring 2023, with zero added sulphur from beginning to end!
