100% Chenin from organic vines planted on different terroirs of Azay-le-Rideau, mainly flint clay soils. Manual harvesting and yields around 40 hl/ha. Alcoholic fermentation in vats, and malolactic fermentation in the bottle. Bottled in November 2021, one year of aging on slats. Neither fined nor filtered, without added sulphites.
