100% Sauvignon, from a blend of old and young vines (around 20 years old on average) planted in Châteauvieux in the Loir-et-Cher. The grapes are harvested by hand, with tightly controlled yields. The vinification here is the opposite of that used for the Argos and Orphée cuvées: the goal here is not to highlight a terroir but rather a grape variety. After direct pressing, the wine is matured 18 months in stainless steel vats on its fine lees, without malolactic fermentation. Bottled with a microdose of sulphur to protect the wine.

Guillaume Sorbe
Guillaume Sorbe is part of a generation of winegrowers who work modestly, rigorously, and unrelentingly – and produce simply exceptional wines. After starting out as a cook, then a sommelier, he finally turned to winemaking, receiving his BTS degree in winemaking and viticulture in Beaune. This winegrower's son then founded his own estate in 2006, borrowing his great-grandmother's maiden name...
