A 100% Romorantin cuvée, from 26- and 60-year-old vines grown on a siliceous-clay soil. The estate is certified organic by ECOCERT, with natural grass ground cover between the vine rows. Harvesting by hand, careful grape sorting in the vines, and low yields: 12 hl/ha. Vinification: direct pressing, low temperature fermentation, indigenous yeasts. 23 months of aging, half in demi-muid barrels and half in amphorae, bottled in August 2022 without fining or filtration, just a microdose of sulfites.
