100% Romorantin cuvée from old vines aged 40 to 60 years, grown organically and planted on flinty sands over Sologne clays. The grapes were harvested by hand in small crates. Natural vinification: 5 days of maceration of the whole bunches, pressing, fermentation and 12 months of aging, half in barrels and half in terracotta amphorae. Blending of the two contents in stainless steel vats in early September 2023, bottled in December 2023 without fining nor filtration, just a micro-dose of sulfur. Maturation in bottles in the estate's cellars.
