A 100% Cabernet Franc cuvée, from a parcel of 15-year-old vines, grown organically and planted on Turonian-age chalky soil. Manual harvest followed by a natural vinification: maceration alternating layers of destemmed and whole cluster grapes, soft pressing, aging in egg-shaped cement vats for 8 months, and one year of maturation in bottle at the estate. Unfined, unfiltered, just a micro-dose of sulphur.
