100% Sauvignon from a parcel of 40-year-old vines, grown on flinty clay. Yields of around 15 hl/ha! Manual harvesting. Grapes harvested by hand. Vinification: direct pressing, gentle settling, indigenous yeasts, transfer to barrels mid-fermentation, maturation on lees in 400-litre barrels and conical vats. 2 g/hl of sulphur at bottling. Certified organic.
