Pinot Noir farmed biodynamically (but not certified), planted on six plots (0.13 to 0.36 ha in size) totalling 1.2 ha, with yields of 15 to 30 hl/ha. Clay and limestone soils in St Romain, Chéry and Les Coignons, and clay and silt in Preuilly. Vines are high quality vine and Burgundian massal selections. Vinification: a pied de cuve made from the first plot harvested starts fermentations, with 50% whole bunches, daily pumping over, and 7 days of maceration. Pressing, blending of free run and press juices, and separate vinifications for each plot.

Guillaume Sorbe
Guillaume Sorbe is part of a generation of winegrowers who work modestly, rigorously, and unrelentingly – and produce simply exceptional wines. After starting out as a cook, then a sommelier, he finally turned to winemaking, receiving his BTS degree in winemaking and viticulture in Beaune. This winegrower's son then founded his own estate in 2006, borrowing his great-grandmother's maiden name...
